Assignment Instructions
For your first assignment, you will convert a recipe and provide an evaluation and critique of the conversion. Using the recipe you identified in your introduction or a similar recipe [similar style of meal] found in an online or published magazine or cookbook, provide that recipe in detail. Outline the ingredients and amounts for the home recipe and summarize preparation methods. Once the original recipe is described, you will revise the recipe to serve 50 people. Display liquid ingredients as volume and other ingredients in pounds and ounces. Outline the ingredients and conversion amounts but expand your discussion of preparation methods to evaluate what would be necessary for the increased yield. Isolate five ingredients and identify conditions or attributes that may affect the preparation of the converted recipe. Examples might be purchase quantities or equipment capabilities.
In addition to providing and describing the recipe, the analytical essay should also address the following:
• What particular issues could arise when converting a home-sized recipe to a recipe to serve a larger amount of people?
• What do menu planners need to keep in mind when converting detailed recipes?
• Is cost ever a factor? Why or why not?
Remember to cite the source from which you are taking the home-sized recipe. It may help to provide the recipes using an appendix at the end of the writing [following the reference list page] instead of at the beginning. The essay can then refer to the appendix and recipe when necessary.
